How To Make Strawberry-Lemon Ice Cream
Zesty and tart, this strawberry and lemon ice cream makes the best blend of fruit flavors with the combination of strawberries, lemon, and heavy cream.
Serves:
Ingredients
- 2cupsfresh strawberries,hulled and roughly chopped
- 1cupwhite sugar,divided
- 2lemons,juiced
- 1lemon,zested
- 1cupmilk
- 2cupsheavy cream
- 1tspvanilla extract
Instructions
-
Combine the strawberries, ⅓ cup of sugar, lemon juice, and lemon zest in a bowl, then stir gently.
-
Cover and store in the refrigerator for about 2 hours.
-
Meanwhile, mix the milk and remaining sugar in a bowl with an electric mixer at low speed for about 2 minutes until sugar dissolves. Stir in the heavy cream, vanilla extract, and some juice from the strawberries, but not the berries themselves.
-
Add the mixture to an ice cream maker, then churn according to the manufacturer’s instructions for about 20 minutes.
-
About 10 minutes before the ice cream is finished, puree most of the strawberries in a food processor or blender. Reserve a few berries to slice for a garnish.
-
Add the strawberries to the ice cream maker for the last 5 minutes of churning. Transfer to an airtight container and freeze for about 4 hours until firm.
-
Serve and enjoy.
