  • 1 cup lemon juice
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 2 tbsp butter
  • 4 egg yolks
  • 2 cups whole milk
  • 1/4 cup lemon zest
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. In a saucepan, combine lemon juice, sugar, cornstarch, salt, and butter. Cook over medium heat until thickened.

  2. In a separate bowl, whisk together egg yolks and milk. Slowly add the hot lemon mixture to the egg mixture, whisking constantly.

  3. Return the mixture to the saucepan and cook over low heat until it reaches the desired pudding consistency. Stir in lemon zest.

  4. Remove from heat and let cool. Transfer to serving dishes and chill in the refrigerator for at least 2 hours.

  5. In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Serve the lemon pudding with a scoop of lemon meringue ice cream on top.
