How To Make Snickerdoodle Bars

Buttery sugar cookies rolled in cinnamon are the kind of desserts that get us every time. These snickerdoodle bars gives us that and more.

Ingredients

For Blondies:

  • 2⅓cupsall-purpose flour,spoon & leveled
  • tspbaking powder
  • ½tspsalt
  • ¾cupunsalted butter,(1.5 sticks) softened to room temperature
  • 1cupgranulated sugar
  • ¾cuppacked light brown sugar
  • 2largeeggs
  • 1egg yolk
  • 1tsppure vanilla extract
  • 1cupwhite chocolate chips

For Cinnamon-Sugar Filling:

  • 1tbspgranulated sugar
  • 1tbsppacked light brown sugar
  • 1tbspground cinnamon

For Vanilla Glaze:

  • 1cupconfectioners’ sugar
  • 1tbspheavy cream,or milk
  • ¼tsppure vanilla extract

Instructions

  1. Heat oven to 350 degrees F. Spray a 13 by 9 inch baking pan with nonstick spray.

  2. In small bowl, combine flour, baking powder, and salt. Set aside.

  3. In large bowl, beat butter on high with an electric or stand mixer.

  4. Beat until butter is creamy, then add both sugars. Gradually beat in eggs and vanilla.

  5. On low speed, beat in dry ingredients until combined. Fold in white chocolate chips.

  6. Spoon half the batter into pan. It will be a relatively thin layer, but try to spread it across the pan evenly.

  7. Sprinkle with the cinnamon sugar filling and spread the remaining batter over top.

  8. Some of the cinnamon sugar will mix into the top layer as you spread it.

  9. Bake 22 to 26 minutes or until golden brown and toothpick inserted in center comes out clean. Cool completely for about 1 hour.

  10. While the bars are cooling, make the glaze. In small bowl, stir glaze ingredients until smooth.

  11. Drizzle over bars and cut into 24 squares.
