- 1 cup pumpkin seeds
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions

Preheat the oven to 350°F (175°C).

In a food processor, pulse the pumpkin seeds until finely chopped.

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Stir in the chopped pumpkin seeds.

Drop rounded tablespoons of dough onto a lined baking sheet.
