- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup granulated sugar, for rolling
Instructions

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the peanut butter, granulated sugar, brown sugar, and softened butter until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.

Shape the dough into 1-inch balls and roll each ball in the granulated sugar.

Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
