How To Make Soft Pumpkin Cookies

Ingredients
- 1 cup canned pumpkin puree
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1 cup chocolate chips (optional)
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Mix well.

Add the egg and vanilla extract to the bowl and mix until combined.

In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

If desired, fold in the chocolate chips.

Drop spoonfuls of the dough onto the prepared baking sheet.

Bake for 10-12 minutes, or until the cookies are lightly golden brown around the edges.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
