How To Make Slow Cooker Roasted Leg of Lamb

Ingredients
- 1 (4-5 pound) leg of lamb
- 4 cloves of garlic, minced
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 onion, sliced
Instructions

Rub the minced garlic, rosemary, thyme, salt, and black pepper all over the leg of lamb.

Heat the olive oil in a skillet over medium-high heat and sear the lamb on all sides until browned.

Place the sliced onion in the bottom of the slow cooker and place the seared leg of lamb on top.

Pour the chicken broth over the lamb.

Cover the slow cooker and cook on low for 8 hours or until the lamb is tender and cooked through.

Remove the lamb from the slow cooker and let it rest for 10 minutes before slicing.

Serve hot with your favorite side dishes.
