  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together the softened butter and 1/2 cup of sugar until light and fluffy.

  3. Add the molasses and egg, and mix well.

  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.

  5. Gradually add the dry ingredient mixture to the wet mixture, mixing until well combined.

  6. Roll dough into 1-inch balls, then roll each ball in the remaining 1/4 cup of sugar to coat.

  7. Place the coated dough balls onto the prepared baking sheet about 2 inches apart.

  8. Bake for 10 minutes, or until cookies are set and slightly cracked.

  9. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
