Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 egg
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves

Instructions

  1. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.

  2. Add the molasses, egg, and vanilla extract, and mix until well combined.

  3. In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.

  4. Gradually mix the dry ingredients into the wet mixture until a dough forms.

  5. Cover the dough with plastic wrap and refrigerate for at least 1 hour.

  6. Preheat the oven to 350°F and line a baking sheet with parchment paper.

  7. Roll the dough into small balls and place them 2 inches apart on the prepared baking sheet.

  8. Bake for 10-12 minutes, or until the edges are set and the cookies are lightly browned.

  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
