How To Make Grandma’s Gingersnap Cookies

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup molasses
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 cup granulated sugar (for rolling)
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the molasses, egg, and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll tablespoon-sized portions of dough into balls, then roll them in the remaining granulated sugar to coat.

Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
