- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of shredded cheddar cheese
- 1 cup of milk
- Salt and pepper to taste
- Chopped fresh chives, for garnish
