How To Make Grandma’s Gingerbread Pancakes

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ cup brown sugar
  • 1 cup milk
  • 1/4 cup molasses
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 2 eggs

Instructions

  1. In a large bowl, whisk together the flour, baking powder, ginger, cinnamon, cloves, nutmeg, and brown sugar.

  2. In a separate bowl, whisk together the milk, molasses, melted butter, vanilla extract, and eggs.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are some lumps.

  4. Heat a non-stick skillet or griddle over medium heat. Drop 1/4 cup portions of batter onto the skillet and spread slightly with the back of a spoon to form pancakes.

  5. Cook for 2-3 minutes, or until bubbles form on the surface of the pancakes. Flip and cook for an additional 1-2 minutes, or until cooked through.

  6. Serve warm with maple syrup, whipped cream, or your favorite toppings.
