How To Make Grandma’s Gingerbread Pancakes

Ingredients
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
- ¼ cup brown sugar
- 1 cup milk
- 1/4 cup molasses
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 2 eggs
Instructions

In a large bowl, whisk together the flour, baking powder, ginger, cinnamon, cloves, nutmeg, and brown sugar.

In a separate bowl, whisk together the milk, molasses, melted butter, vanilla extract, and eggs.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are some lumps.

Heat a non-stick skillet or griddle over medium heat. Drop 1/4 cup portions of batter onto the skillet and spread slightly with the back of a spoon to form pancakes.

Cook for 2-3 minutes, or until bubbles form on the surface of the pancakes. Flip and cook for an additional 1-2 minutes, or until cooked through.

Serve warm with maple syrup, whipped cream, or your favorite toppings.
