How To Make Mounds Bar Cake

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup sweetened shredded coconut
  • 1/4 cup condensed milk
  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

  3. In a large bowl, cream together the melted butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.

  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.

  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely.

  6. In a small bowl, combine the shredded coconut and condensed milk until well mixed.

  7. Once the cake has cooled, spread the coconut mixture evenly over the top.

  8. In a saucepan, heat the heavy cream until it simmers. Remove from heat and add the chocolate chips. Let sit for 5 minutes, then stir until smooth and creamy.

  9. Pour the ganache over the coconut layer, spreading it evenly with a spatula.

  10. Refrigerate the cake for at least 1 hour, or until the ganache is set.

  11. Slice and serve. Enjoy the rich and delicious Mounds Bar Cake!
