How To Make Strawberry-mallow Cheesecake

Ingredients
- 2 cups crushed graham crackers
- 1/2 cup melted butter
- 1 cup strawberries, chopped
- 1/4 cup sugar
- 2 tsp lemon juice
- 1 tsp vanilla extract
- 16 oz cream cheese, softened
- 1 cup marshmallows
Instructions

Preheat the oven to 325°F (163°C).

In a bowl, mix the crushed graham crackers and melted butter until well combined. Press the mixture into the bottom of a greased 9-inch (23 cm) springform pan to form the crust.

In a separate bowl, combine the chopped strawberries, sugar, lemon juice, and vanilla extract. Mash the strawberries with a fork to release their juices.

In a mixing bowl, beat the cream cheese until creamy. Add the strawberry mixture and continue to beat until well incorporated.

Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.

Bake in the preheated oven for 40-50 minutes or until the center is set. Remove from the oven and let it cool completely.

Once cooled, top the cheesecake with marshmallows and place under the broiler for a few minutes until the marshmallows are golden brown and toasted.

Refrigerate for at least 4 hours or overnight before serving.
