Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 tsp pure vanilla extract
  • 1/2 cup boiling water
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped pecans
  • 1/2 cup evaporated milk
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large egg yolks
  • 1/2 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. Add milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.

  4. Stir in the boiling water until the batter is smooth. It will be thin, but that’s okay.

  5. Pour the batter into the prepared cake pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.

  6. While the cake is baking, prepare the coconut pecan frosting. In a saucepan, combine shredded coconut, chopped pecans, evaporated milk, sugar, butter, egg yolks, and vanilla extract.

  7. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a low boil. Remove from heat and let cool completely.

  8. Once the cake has cooled, spread the coconut pecan frosting evenly over the top.

  9. Serve and enjoy!
