How To Make Devil Dog Cake

Dive headfirst into this decadent devil dog cake recipe. Rich chocolate cake topped with an elegant white frosting that no sweet tooth can resist.

For Cake:

  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder, (not dutch-process) plus additional for dusting
  • tsp baking soda
  • ¾ tsp salt
  • 2 sticks unsalted butter, softened
  • cups packed dark brown sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1⅓ cups water

For Frosting:

  • 2 large egg whites
  • ½ cup sugar
  • ¼ cup light corn syrup
  • 2 tbsp water
  • 1 tsp pure vanilla extract



  1. Preheat oven to 350 degrees F with rack in middle. Butter and flour an 8-inch square cake pan that's 2 inches deep.
  2. In a mixing bowl add flour, cocoa powder, baking soda, and salt. Whisk together.
  3. In a separate mixing bowl cream together butter and brown sugar using an electric mixer until pale and fluffy. Add eggs 1 at a time, beating well, and mix in vanilla.
  4. Alternately add flour mixture and water alternately in batches, beginning and ending with flour mixture and mixing until combined.
  5. Pour batter into cake pan and even out the top. Bake for 45 to 55 minutes or until a wooden pick inserted in the center comes out clean. Place pan on a rack and let cool for 1 hour. Transfer cake to a cake plate.


  1. Combine egg whites, corn syrup, water, sugar and vanilla in a metal bowl over a saucepan of simmering water. Beat with an electric hand mixer at high for 6 to 7 minutes or until thick and fluffy. Remove bowl from heat and continue to beat until slightly cooled.
  2. Mound frosting on top of cake and even out. Dust with additional cocoa powder. Cut into desired slices and serve.
