Ingredients
- 10 rice paper wrappers
- 200g ground pork
- 200g shrimp, peeled and deveined
- 1 carrot, julienned
- 1/2 onion, finely chopped
- 2 cloves of garlic, minced
- 100g bean sprouts
- 1/4 cup wood ear mushrooms, soaked and finely chopped
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/4 teaspoon black pepper
- Cooking oil, for frying
Instructions

In a mixing bowl, combine the ground pork, shrimp, carrot, onion, garlic, bean sprouts, wood ear mushrooms, fish sauce, soy sauce, sugar, and black pepper.

Fill a large bowl with warm water. Dip one rice paper wrapper into the water and soak for a few seconds until soft and pliable. Place the wrapper on a clean surface.

Spoon about 2 tablespoons of the filling onto the center of the wrapper. Fold the sides over the filling and then roll tightly into a cylinder shape.

Heat cooking oil in a deep pan over medium heat. Fry the spring rolls for about 4-5 minutes until golden brown and crispy. Repeat with the remaining wrappers and filling.

Remove the spring rolls from the pan and drain on paper towels.

Serve the spring rolls with a dipping sauce of your choice, such as sweet chili sauce or fish sauce.
