Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 1 carrot, diced
- 1 tomato, diced
- 1/4 cup raisins
- 1/4 cup sliced green olives
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 1/4 cup fresh cilantro, chopped
- Rice and tortillas, for serving
Instructions

In a large skillet, brown the ground beef over medium heat, breaking it up with a spoon. Remove excess fat if needed.

Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.

Add the diced potatoes, carrot, and tomato to the skillet and cook for 5 minutes, or until the vegetables start to soften.

Stir in the raisins, sliced green olives, tomato paste, ground cumin, dried oregano, and chili powder. Season with salt and pepper to taste.

Reduce heat to low, cover the skillet, and let the picadillo simmer for 15-20 minutes, or until the potatoes are cooked through.

Stir in the chopped cilantro and adjust seasoning if necessary.

Serve the Mexican Picadillo with rice and tortillas.
