Ingredients

  • 1.5 pounds new potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup crème fraîche
  • 1 tablespoon finely chopped fresh chives
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Wash the new potatoes and pat them dry. Cut any larger potatoes in half.

  3. In a large bowl, toss the potatoes with olive oil, salt, and black pepper until well coated.

  4. Spread the potatoes in a single layer on a baking sheet.

  5. Roast in the preheated oven for 25-30 minutes or until the potatoes are golden brown and crispy.

  6. In the meantime, prepare the chilli crème fraîche by mixing crème fraîche, chopped chives, lime juice, and chili powder in a small bowl.

  7. Once the potatoes are roasted, transfer them to a serving dish and drizzle the chilli crème fraîche over the top.

  8. Serve hot and enjoy!
