Ingredients

  • 8 chicory leaves
  • 200g prawns, cooked and chopped
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. In a bowl, combine the prawns, mango, red onion, cilantro, lime juice, olive oil, salt, and pepper. Mix well.

  2. Arrange the chicory leaves on a serving plate.

  3. Spoon the prawn and mango mixture into each chicory cup.

  4. Serve and enjoy!
