  • 4 cups mixed greens

  • 1 avocado, sliced
  • 1 cup cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 4 slices cooked bacon, crumbled
  • 1/4 cup chopped fresh parsley
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, hard-boiled eggs, cherry tomatoes, avocado, cucumber, red onion, feta cheese, bacon, and parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to combine.
