Ingredients

  • 4 store-bought tart shells
  • 1 cup watercress, chopped
  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves
  • 2 cloves garlic
  • 1/4 cup capers
  • 1/2 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1/2 cup feta cheese
  • Zest of 1 lemon
  • 2 tbsp heavy cream

Instructions

  1. Preheat the oven according to the packaging instructions of the tart shells.

  2. In a blender or food processor, combine the watercress, parsley, mint, garlic, capers, olive oil, lemon juice, salt, and pepper. Blend until smooth to make the salsa verde.

  3. In a separate bowl, combine the feta cheese, lemon zest, and heavy cream. Use an electric mixer or whisk to whip the mixture until light and fluffy.

  4. Fill each tart shell with a spoonful of the salsa verde.

  5. Top the salsa verde with a dollop of the whipped lemon feta.

  6. Place the filled tart shells on a baking sheet and bake according to the packaging instructions, or until the shells are golden brown.

  7. Serve the Spring Tarts warm and enjoy!
