Ingredients
- 4 store-bought tart shells
- 1 cup watercress, chopped
- 1 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves
- 2 cloves garlic
- 1/4 cup capers
- 1/2 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- 1/2 cup feta cheese
- Zest of 1 lemon
- 2 tbsp heavy cream
Instructions

Preheat the oven according to the packaging instructions of the tart shells.

In a blender or food processor, combine the watercress, parsley, mint, garlic, capers, olive oil, lemon juice, salt, and pepper. Blend until smooth to make the salsa verde.

In a separate bowl, combine the feta cheese, lemon zest, and heavy cream. Use an electric mixer or whisk to whip the mixture until light and fluffy.

Fill each tart shell with a spoonful of the salsa verde.

Top the salsa verde with a dollop of the whipped lemon feta.

Place the filled tart shells on a baking sheet and bake according to the packaging instructions, or until the shells are golden brown.
