Ingredients

  • 2 cups buttermilk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 packet unflavored gelatin
  • Fresh berries for serving (optional)

Instructions

  1. In a small saucepan, heat the heavy cream and sugar over medium heat until the sugar dissolves. Remove from heat.

  2. Sprinkle the gelatin over 1/4 cup of cold water and let it bloom for 5 minutes.

  3. Once bloomed, microwave the gelatin for 15 seconds or until melted.

  4. In a large bowl, whisk together the buttermilk, melted gelatin, and vanilla extract.

  5. Slowly pour the warm cream mixture into the buttermilk mixture, whisking constantly.

  6. Divide the mixture evenly among 4 serving glasses or ramekins.

  7. Place the glasses in the refrigerator for at least 4 hours or until set.

  8. Before serving, garnish with fresh berries if desired.
