How To Make Sfogliatelle Ricce
Serves:
Ingredients
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1/4 cup unsalted butter, chilled and cubed
- 1/2 cup water
- 1 cup ricotta cheese
- 1/4 cup granulated sugar
- 1/4 cup semolina flour
- 1/4 tsp cinnamon
- 1/4 cup candied orange peel, chopped
- Powdered sugar, for dusting
Instructions
-
In a large bowl, mix together the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
-
Gradually add the water, stirring until the dough comes together. Knead the dough until smooth, then shape into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.
-
In a separate bowl, combine the ricotta cheese, sugar, semolina flour, cinnamon, and candied orange peel. Mix well.
-
Preheat the oven to 375°F (190°C).
-
Remove the dough from the refrigerator and roll it out into a thin rectangle on a lightly floured surface.
-
Spread the ricotta filling evenly over the dough, leaving a small border.
-
Starting from one end, roll the dough tightly into a log. Cut the log into 1-inch slices.
-
Place the slices, cut-side up, on a baking sheet lined with parchment paper. Press down gently on each slice to create a shell shape.
-
Bake for 25-30 minutes, or until golden brown.
-
Remove from the oven and let cool for a few minutes. Dust with powdered sugar before serving.
