Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 1/2 cup water
  • 1 cup ricotta cheese
  • 1/4 cup granulated sugar
  • 1/4 cup semolina flour
  • 1/4 tsp cinnamon
  • 1/4 cup candied orange peel, chopped
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, mix together the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.

  2. Gradually add the water, stirring until the dough comes together. Knead the dough until smooth, then shape into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.

  3. In a separate bowl, combine the ricotta cheese, sugar, semolina flour, cinnamon, and candied orange peel. Mix well.

  4. Preheat the oven to 375°F (190°C).

  5. Remove the dough from the refrigerator and roll it out into a thin rectangle on a lightly floured surface.

  6. Spread the ricotta filling evenly over the dough, leaving a small border.

  7. Starting from one end, roll the dough tightly into a log. Cut the log into 1-inch slices.

  8. Place the slices, cut-side up, on a baking sheet lined with parchment paper. Press down gently on each slice to create a shell shape.

  9. Bake for 25-30 minutes, or until golden brown.

  10. Remove from the oven and let cool for a few minutes. Dust with powdered sugar before serving.
