How To Make Indian Tofu Vindaloo Recipe

A spicy and tangy curry made with marinated tofu and a blend of Indian spices.

Serves:

Ingredients

  • 1 block of tofu, cubed
  • 2 tbsp vindaloo paste
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp mustard seeds
  • 1 tsp sugar
  • 1 tbsp red wine vinegar
  • 1 cup water
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. In a bowl, mix the cubed tofu and vindaloo paste and set aside for 30 minutes.

  2. In a pan, heat the vegetable oil and add the onion and garlic. Cook until soft.

  3. Add the cumin, coriander, turmeric, garam masala, and mustard seeds and cook for 1-2 minutes until fragrant.

  4. Add the marinated tofu to the pan and cook for 5 minutes until browned.

  5. Stir in the sugar and red wine vinegar, followed by the water. Bring to a boil, then reduce heat and let simmer for 20-30 minutes until the sauce has thickened.

  6. Season with salt and pepper to taste.

  7. Garnish with cilantro before serving.
