Serves:

Ingredients

  • 500g pork, cubed
  • 1 tbsp ginger-garlic paste
  • 2 tbsp vindaloo masala paste
  • 2 tbsp vinegar
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 2-3 green chilies, slit
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Marinate the pork with ginger-garlic paste, vindaloo masala paste, vinegar, and salt. Let it rest for 30 minutes.

  2. Heat oil in a pan and sauté the onions until golden brown.

  3. Add the tomato puree and cook until the oil separates.

  4. Add the marinated pork and cook for 10 minutes on high heat, stirring occasionally.

  5. Reduce the heat to low, cover the pan, and simmer for 1 hour or until the pork is tender.

  6. Add the green chilies, turmeric powder, cumin powder, and coriander powder. Mix well and cook for another 10 minutes.

  7. Adjust the seasoning according to taste.

  8. Serve hot with steamed rice or bread.
