How To Make African Butternut Squash Soup
Warm up with this flavorful soup featuring butternut squash and African spices.

Ingredients
- 1 medium butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp cinnamon
- 1 tsp paprika
- 1 can coconut milk
- 4 cups vegetable broth
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions

Heat olive oil in a large pot over medium heat. Add the onions and garlic and cook until soft and fragrant.

Add the butternut squash and spices to the pot and stir to combine. Cook for several minutes until the squash starts to soften.

Pour in the coconut milk and vegetable broth and bring to a simmer. Allow to cook for 30-40 minutes, or until the squash is completely soft.

Use an immersion blender or transfer to a blender to puree the soup until smooth. Season with salt and pepper to taste.
