Tender and succulent filet mignon seasoned to perfection and served with a side of roasted vegetables.

Ingredients
- 4 (8 oz) filet mignon steaks
- 2 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 2 cloves garlic, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Instructions

Preheat the oven to 400°F.

Rub the steaks with olive oil and season with kosher salt and freshly ground black pepper.

Heat a large cast-iron skillet over high heat.

Once the skillet is hot, add the steaks and sear for 2-3 minutes on each side until browned.

Add minced garlic, rosemary, and thyme to the skillet and transfer to the oven.

Roast for 10-12 minutes for medium-rare or until the internal temperature of the steak reaches 135°F on a meat thermometer.

Let the steaks rest for 5 minutes before serving with your choice of roasted vegetables.
