A classic, moist pound cake infused with lemon juice and topped with a sweet lemon glaze.

Ingredients

  • 1 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract
  • For Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9×5 inch loaf pan.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  3. In a separate bowl, beat together butter and sugar until light and fluffy.

  4. Add in eggs, one at a time, mixing well after each addition.

  5. Add sour cream, lemon juice, and vanilla extract to the wet mixture and stir until well combined.

  6. Gradually add in the dry mixture and stir until fully incorporated.

  7. Pour batter into greased loaf pan and bake for 1 hour 15 minutes, until a toothpick comes out clean.

  8. Let cake cool for 10 minutes in the pan before removing and placing on a wire rack to cool completely.

  9. While the cake is cooling, make the lemon glaze by mixing together powdered sugar and lemon juice until smooth.

  10. Drizzle glaze over the cooled cake and serve.
