Ingredients
- 2 large eggs
- 2 large egg yolks
- ¾ cup granulated sugar
- ½ cup fresh lemon juice
- 1 tbsp lemon zest
- ½ cup unsalted butter, cubed
Instructions

In a medium saucepan, whisk the eggs, egg yolks, sugar, lemon juice, and lemon zest until smooth.

Heat the mixture over medium-low heat, stirring constantly with a rubber spatula.

Gradually add the cubed butter while stirring until the mixture thickens.

Remove from heat and strain the mixture through a fine-mesh sieve into a jar or bowl.
