  • 2 large eggs
  • 2 large egg yolks
  • ¾ cup granulated sugar
  • ½ cup fresh lemon juice
  • 1 tbsp lemon zest
  • ½ cup unsalted butter, cubed

Instructions

  1. In a medium saucepan, whisk the eggs, egg yolks, sugar, lemon juice, and lemon zest until smooth.

  2. Heat the mixture over medium-low heat, stirring constantly with a rubber spatula.

  3. Gradually add the cubed butter while stirring until the mixture thickens.

  4. Remove from heat and strain the mixture through a fine-mesh sieve into a jar or bowl.

  5. Cover and chill in the refrigerator until cold and set, about 2 hours.

  6. Serve as desired.
