Ingredients

  • 2 ripe bananas, sliced
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 cup vanilla wafers, crushed
  • Whipped cream for topping (optional)

Instructions

  1. In a medium saucepan, combine milk, sugar, flour, and salt.

  2. Cook over medium heat, whisking constantly, until mixture thickens and comes to a boil (about 10-12 minutes).

  3. Remove from heat and whisk in egg yolks and vanilla extract until smooth.

  4. In a 4-cup dish, layer banana slices and crushed vanilla wafers.

  5. Pour pudding over the wafers.

  6. Cover and refrigerate for at least 2 hours or until chilled.

  7. Top with whipped cream before serving (if desired).
