Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 cup granulated sugar
  • 1/3 cup fresh lemon juice
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F.

  2. In a medium bowl, combine 1 cup flour and 1/4 cup powdered sugar.

  3. Cut in butter and mix until crumbly.

  4. Press mixture into the bottom of a greased 8×8-inch baking dish.

  5. Bake crust for 15-20 minutes or until lightly golden brown.

  6. While crust is baking, whisk together eggs and granulated sugar in a medium bowl.

  7. Stir in lemon juice, 2 tbsp flour, and baking powder until well mixed.

  8. Pour mixture over baked crust and bake an additional 20-25 minutes or until set.

  9. Allow to cool, then dust powdered sugar over the top.

  10. Cut into bars and serve.
