Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 cup shredded carrot
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. In another bowl, whisk together eggs, oil, and milk. Add to dry ingredients and mix until just combined.

  4. Fold in shredded carrots and raisins.

  5. Grease muffin tin or line with paper liners. Fill each muffin cup 2/3 full with batter.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool in pan for 5 minutes, then remove to a wire rack to cool completely.
