How To Make Nigella’s Gazpacho Recipe
A refreshing and cooling soup made with raw vegetables and served chilled.
Serves:
Ingredients
- 2 large red peppers
- 1 small red onion
- 1 large cucumber
- 4 medium-sized vine tomatoes
- 1/2 small jalapeño pepper, seeded
- 1 small garlic clove, minced
- 2 tablespoons of sherry vinegar
- 2 tablespoons of extra-virgin olive oil
- 2 cups of cold water
- Salt, to taste
Instructions

Roughly chop the peppers, onion, cucumber, and tomato and put them in a large bowl with the jalapeño pepper and garlic.

Add the sherry vinegar, olive oil, and water to the bowl.

Use a hand blender or food processor to blend the ingredients until it is a smooth consistency.

Add salt to taste.

Chill the soup for at least an hour or until completely cool.

Serve with a drizzle of olive oil.
