How To Make Kermit’s Oyster Rockefeller Recipe

Ingredients

  • 16 fresh oysters, shucked
  • 2 cups spinach, chopped
  • 1/4 cup Pernod
  • 1/4 cup heavy cream
  • 1/4 cup butter
  • 1/4 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 450°F.

  2. Rinse the oysters and set aside.

  3. In a pan, sauté spinach until wilted.

  4. Add Pernod and cook until the liquid has evaporated.

  5. Mix in cream and butter and cook until heated through.

  6. In a separate bowl, mix bread crumbs, Parmesan cheese, salt, and pepper.

  7. Place oysters in the shell, cover with spinach mix, and sprinkle with bread crumb mixture.

  8. Bake for 8-10 minutes, or until oyster edges begin to curl.
