Ingredients

  • 1 pound dry red beans
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 pound smoked sausage, sliced
  • 2 teaspoons dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 bay leaf
  • 4 cups cooked white rice

Instructions

  1. Rinse the dry beans and soak overnight.

  2. In a large pot, sauté onion, bell pepper, celery, and garlic until tender.

  3. Add chicken broth, smoked sausage, soaked beans, thyme, smoked paprika, salt, and bay leaf.

  4. Simmer for 2 hours, adding water if needed.

  5. Serve with cooked white rice.
