How To Make Kermit’s Boudin Recipe

Ingredients

  • 1 lb ground pork
  • 1 cup cooked rice
  • 1/2 onion, chopped
  • 1/2 bell pepper, chopped
  • 1 celery stalk, chopped
  • 4 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 4 sausage casings

Instructions

  1. In a large bowl, mix together ground pork, cooked rice, onion, bell pepper, celery, garlic, chicken broth, salt, black pepper, and cayenne pepper.

  2. Stuff mixture into sausage casings, twisting into 5-6 inch links.

  3. In a large pot of boiling water, poach sausages for 45 minutes to an hour.

  4. Remove from water and grill on a hot grill or pan until browned on all sides.
