Ingredients

  • 1 cup quinoa
  • 2 sweet potatoes, diced
  • 1 red onion, sliced
  • 1 red pepper, sliced
  • 1 can black beans, drained and rinsed
  • 2 avocados, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Preheat oven to 400°F.

  2. Cook quinoa according to package instructions.

  3. Toss sweet potatoes, red onion, and red pepper with olive oil, garlic powder, smoked paprika, salt, and pepper.

  4. Spread mixture on a baking sheet and bake for 25-30 minutes or until tender.

  5. Divide quinoa among four bowls, then top with roasted vegetables and black beans.

  6. Add slices of avocado on top and serve with lime wedges.
