How To Make Roasted Beet Salad Recipe
A flavorful salad with earthy roasted beets, fresh greens, and tangy goat cheese.
Serves:
Ingredients
- 4 medium-sized beets, scrubbed and trimmed
- 1/4 cup of balsamic vinegar
- 1/4 cup of olive oil
- 1 tbsp of honey
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 4 cups of mixed greens
- 1/2 cup of crumbled goat cheese
- 1/4 cup of chopped walnuts
Instructions

Preheat the oven to 400°F (200°C).

Wrap each beet individually in foil and place on a baking sheet. Roast for 45-50 minutes, or until tender.

In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and black pepper.

Once the beets are cooked, let them cool for a few minutes before peeling and slicing.

In a large bowl, combine mixed greens, sliced beets, crumbled goat cheese, and chopped walnuts.

Drizzle the dressing over the salad and toss gently to combine.
