How To Make Vegetable Wellington Recipe

A delicious vegetarian dish with mixed vegetables wrapped in puff pastry.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 small zucchini, diced
  • 1 small yellow squash, diced
  • 1 cup mushrooms, sliced
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • ½ tsp dried basil
  • Salt and pepper to taste
  • 1 sheet of puff pastry
  • 1 egg, beaten

Instructions

  1. Preheat oven to 400°F.

  2. Heat olive oil in a skillet, add onion and garlic and cook until soft.

  3. Add red bell pepper, zucchini, yellow squash, and mushrooms. Cook until vegetables are tender.

  4. Stir in tomato paste, thyme, basil, salt, and pepper. Remove from heat and let cool.

  5. Roll out puff pastry on a floured surface. Spoon vegetable mixture onto the center of the pastry. Fold the pastry over and seal the edges.

  6. Brush the top of the pastry with the beaten egg.

  7. Bake for 35-40 minutes until the puff pastry is golden brown.

  8. Serve hot.
