How To Make Caramelized Onion Soup
A comforting and flavorful soup made with caramelized onions, beef broth and thyme.
Serves:
Ingredients
- 6 large onions, sliced
- 3 tbsp butter
- 2 tbsp olive oil
- 1 tsp sugar
- 1 garlic clove, minced
- 2 tbsp flour
- 8 cups beef broth
- 2 tbsp fresh thyme leaves
- Salt and pepper to taste
- 4 slices of crusty bread
- 4 slices of Swiss cheese
Instructions

In a large pot, heat butter and olive oil over medium heat. Add onions and sugar, and cook for 45 minutes to an hour, stirring occasionally, until they are golden brown and caramelized.

Add garlic and thyme and cook for another minute.

Add flour and stir until combined.

Slowly add beef broth and bring to a boil. Reduce heat and let simmer for 30 minutes.

Season with salt and pepper to taste.

Preheat oven to broil.

Ladle soup into 4 oven-safe bowls. Top each bowl with a slice of bread and a slice of Swiss cheese.

Place bowls on a baking sheet and broil for 2-3 minutes or until cheese is melted and bubbly.

Serve hot.
