How To Make Lobster Bisque

A rich and creamy soup with chunks of lobster meat.

Serves:

Ingredients

  • 2 1 1/2 lb lobster
  • 4 tbsp butter
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 3 garlic cloves, minced
  • 1/4 cup flour
  • 2 cups chicken stock
  • 1 cup heavy cream
  • 1 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Boil lobsters for 10 minutes, then remove meat and set aside.

  2. Melt butter in a pot and sauté onion, carrots, and garlic.

  3. Add flour and cook for 2 minutes.

  4. Add chicken stock, cream, and paprika. Bring to a boil and let simmer for 20 minutes.

  5. Add lobster meat and season with salt and pepper. Cook for an additional 5 minutes.

  6. Puree soup in a blender and serve hot.
