  • 1 red bell pepper, seeded and sliced

  • 1 zucchini, sliced lengthwise
  • 1 summer squash, sliced lengthwise
  • 1 red onion, sliced
  • 1 bunch asparagus, trimmed
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • Juice of 1 lemon

Instructions

  1. Preheat grill to medium-high heat.

  2. Toss vegetables with olive oil, salt, and pepper.

  3. Grill the vegetables until lightly charred and tender, turning occasionally, about 10-15 minutes.

  4. Arrange the grilled vegetables on a platter and squeeze lemon juice over them.

  5. Serve hot or at room temperature.
