A classic Italian dish made with breaded eggplant slices, marinara sauce, and melted cheese.

Ingredients
- 2 large eggplants, sliced into 1/2 inch rounds
- 1 cup all-purpose flour
- 4 eggs, beaten
- 2 cups Italian seasoned breadcrumbs
- 1/2 cup grated parmesan cheese
- Salt and pepper, to taste
- 1 jar marinara sauce
- 2 cups shredded mozzarella cheese
Instructions

Preheat oven to 375°F.

Dip eggplant slices in flour, then beaten eggs, followed by breadcrumbs mixed with parmesan cheese, salt, and pepper.

Place breaded eggplant slices on a baking sheet and bake for 20 minutes or until golden brown.

In a separate baking dish, spread a layer of marinara sauce followed by a layer of baked eggplant slices and a layer of mozzarella cheese. Repeat layers until ingredients are used up.

Cover the baking dish with foil and bake for an additional 20 minutes or until cheese is melted and bubbly.
