Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt and pepper, to taste
  • 1/4 cup olive oil
  • 4 tbsp unsalted butter
  • 8 oz sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 200°F.

  2. In a shallow dish, combine the flour, salt, and pepper.

  3. Coat the chicken breasts in the flour mixture.

  4. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.

  5. Add the chicken and cook until golden brown on both sides, 3-4 minutes per side.

  6. Remove the chicken from the skillet and place on a baking sheet, then transfer to the oven to keep warm.

  7. Add the remaining butter to the skillet and sauté the mushrooms until tender, about 5 minutes.

  8. Deglaze the skillet with the Marsala wine, scraping up any brown bits from the bottom.

  9. Add the chicken broth and bring the mixture to a simmer, cooking until the liquid has reduced by half, about 10 minutes.

  10. Stir in the heavy cream and cook for an additional 5 minutes until the sauce has thickened.

  11. Return the chicken to the skillet and coat in the sauce.

  12. Garnish with chopped parsley and serve hot.
