How To Make Baja Fresh Fish Burrito Recipe

A delicious and fresh burrito filled with grilled fish, rice, beans, and veggies.

Serves:

Ingredients

  • 1 lb of white fish fillets
  • 2 tbsp of olive oil
  • 1 tsp of chili powder
  • 1/2 tsp of cumin
  • Salt and pepper to taste
  • 1/2 cup of rice
  • 1/2 cup of black beans
  • 1/2 cup of corn
  • 1/2 cup of diced tomatoes
  • 1/4 cup of chopped cilantro
  • 4 large flour tortillas
  • Guacamole and salsa for serving

Instructions

  1. Preheat grill or grill pan.

  2. Brush fish fillets with olive oil and season with chili powder, cumin, salt, and pepper.

  3. Grill fish for 3-4 minutes on each side or until cooked through.

  4. Cook rice according to package instructions.

  5. Heat black beans and corn in a separate saucepan.

  6. Warm tortillas in the microwave or on the grill.

  7. Assemble burritos by placing rice, black beans, corn, diced tomatoes, cilantro, and grilled fish on a tortilla.

  8. Roll tortilla tightly around the ingredients.

  9. Serve with guacamole and salsa.
