Ingredients
- 1 lb turtle meat, cleaned and chopped
- 1/2 cup flour
- 1/2 cup butter
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 stalks celery, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1 bay leaf
- 1/2 cup sherry
- Salt and pepper, to taste
- Hot sauce, to taste
Instructions

In a large pot, heat butter over medium-high heat. Add flour and stir constantly to make a roux. Cook until the roux turns a caramel color.

Add onion, bell pepper, and celery to the pot. Cook until the vegetables are tender.

Add garlic and cook for 1-2 minutes until fragrant.

Add chicken broth, turtle meat, thyme, oregano, and bay leaf. Bring to a boil then reduce heat and simmer for 2 hours.

Add sherry and season with salt, pepper, and hot sauce to taste.

Serve hot with crusty bread.
