Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Place the chicken, onion, garlic, ginger, curry powder, turmeric, cumin, paprika, salt, and black pepper in the slow cooker.

  2. Pour in the coconut milk and chicken broth. Stir everything together.

  3. Cover and cook on low heat for 4 hours or until the chicken is cooked through and tender.

  4. If desired, mix cornstarch with a little water to make a slurry and stir it into the curry to thicken the sauce.

  5. Serve the slow cooker chicken curry with steamed rice or naan bread.
