Ingredients

  • 1 eggplant, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 can (14 oz) of diced tomatoes
  • 2 tablespoons of tomato paste
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they become translucent.

  3. Add the eggplant, zucchini, yellow squash, red bell pepper, and yellow bell pepper to the skillet. Cook for about 5 minutes, until the vegetables start to soften.

  4. Stir in the diced tomatoes, tomato paste, dried thyme, dried oregano, salt, and pepper. Cook for an additional 5 minutes.

  5. Transfer the vegetable mixture to a baking dish and spread it out evenly.

  6. Bake in the preheated oven for 30-35 minutes, until the vegetables are tender.

  7. Serve hot as a main course or as a side dish.
