How To Make Easy Pressure Cooker Lamb & Coconut Curry

Ingredients
- 1.5 lbs lamb, cubed
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 thumb-sized ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp chili flakes (optional, for heat)
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 tbsp vegetable oil
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Set the pressure cooker to sauté mode. Heat the vegetable oil, then add the lamb and brown it on all sides.

Add the onion, garlic, and ginger. Sauté for a few minutes until the onion is translucent.

Add the curry powder, turmeric powder, cumin powder, coriander powder, and chili flakes (if using). Stir well to coat the meat and onions with the spices.

Pour in the coconut milk and chicken broth. Give it a good stir.

Close the pressure cooker lid and set the cooking time to 30 minutes on high pressure.

Once the cooking time is up, use the quick release to depressurize the cooker.

Open the lid and check the seasoning. Add salt, if needed.
